large potatoes (enough to fill a 9x13 glass
baking dish)
1 pint
whipping cream- 2 cups
Salt and
Pepper
2 tsp.
Parsley flakes
2 cups
grated cheddar cheese
Preheat
oven to 400.
Cut
potatoes into thin french fry strips.
Lay fries,
in a 9x13 glass pan.
Pour cream
over the top of the fries.
Salt and
pepper generously.
Sprinkle at
least 2 cups grated Cheddar Cheese on top.
Sprinkle parsley
flakes on top of the cheese.
Cover with
foil & poke a fork through the top of the foil, 2 or 3 times to allow a
little steam to escape.
Cook at 400
for about 1 hour, 15 minutes, or until potatoes are tender with oven rack in
the middle of the oven.
During the last 15 or 20
minutes of baking lower oven rack one more step. (This makes the bottom of your
potatoes, brown and crispy.)***A favorite way we now eat potatoes! Not for the diet but great for the occasional guilty pleasure! This is great with hamburgers, BBQ beef burgers, Crockpot Buffalo Chicken. It's a little time consuming to cut the potatoes but so worth it. They really are creamy and cheesy and melt in your mouth! These are best served immediately.
