Crispy Basil Chicken

3/4 cup flour
2 eggs, beaten
1/2 cup bread crumbs
1/2 cup Panko bread crumbs
1/2 cup grated Parmesan cheese
1 1/2 Tbsp dried basil
1/2 tsp garlic salt
salt and pepper to taste
12 chicken tenders
cooking oil (I prefer canola)

Place eggs in a bowl. Place flour in a bowl.

In another bowl, combine bread crumbs, Panko crumbs, Parmesan cheese, basil, garlic salt, pepper and salt.

Coat chicken with flour and then dip in eggs followed by coating it with the bread crumb mixture.

In a skillet over medium heat, fry chicken on both sides til done (juices running clear) about 15 minutes.

****I love cooking with Panko bread crumbs. It gives an extra light crunch. This recipe brings a different flavor to otherwise ordinary fried chicken tenders.
