3 lb roast
1 Tbsp oil
1/4 cup Soy sauce
1 cup prepared coffee, regular or Decaf*
2 bay leaves, crumbled
1 garlic, finely minced
1/2 Tsp dried oregano
2 onions, sliced
Additional coffee and soy sauce as needed
Preheat oven to 300. Do NOT pound or flour the meat.
Heat oil in a heavy skillet over high heat, then sear meat on both sides.
Meanwhile, in a large roasting pan, combine the soy sauce, coffee, bay leaves, garlic, oregano, and one of the sliced onions.
Transfer the browned meat to the roasting pan. Top with 2nd sliced onion.
Cover and bake for 3 1/2 to 4 hours, basting every hour with pan juices.
If the liquid begins to boil away (this depends on the heaviness of your pan), add another cup of coffee and a liberal splash of soy sauce. There should be quite a bit of liquid.
*Instant coffee can be used.
****This recipe is one my mom uses for roast. She got it from an Amish cookbook that I gave her for Christmas several years ago. It is my favorite way to eat roast and this is the recipe she uses for our traditional roasts suppers and lunches.
She will sometimes slice this roast to use on hard rolls. Use pan juices in a side bowl as a "French Dip".
