Hot Fudge Pudding

Blend together in a bowl:

1 cup flour
2 tsp baking powder
1/4 tsp salt
3/4 cup sugar
2 tbsp cocoa powder

Stir in:

1/2 cup milk
2 tbsp oil
1 cup chopped nuts, optional (I used 1/2 cup of finely chopped pecans and it was plenty for my liking.

Spread mixture into a 9 inch square pan. (I used an 8" x 8" glass baking dish)

In a small bowl, blend:

1/4 cup packed brown sugar
1/4 cup cocoa

Sprinkle mixture of batter in pan.

Pour 1 3/4 cup hot water over mixture in pan

Bake at 350 for 45 minutes. Serve warm or cold with rich milk, cream, or ice cream. Serves 9.

****A few weekends ago, my MIL and SIL came to visit. I fixed a meal but didn't have any ideas for dessert. I got online for some quick dessert ideas and came up on this one. It was super easy and uses ingredients you already have in your pantry. This dessert makes it's on "gravy" in the bottom of the pan that is delish when drizzled over ice cream. I'm sure this gravy becomes more of a pudding consistency when refrigerated. But we couldn't wait for it to cool so we ate it warm with ice cream.

This recipe is definitely a keeper and will be served at many more meals!
