White Bean/Chicken Chili Soup

If you love Ruby Tuesday's White Bean/chicken chili soup....you'll love this!

you will need:
Chicken( I bought chicken tenderloins ...easier to cut up)
wt northern beans -1 bag
red bell pepper ( you 'll only need about 1/3 of pepper and then chop that up)
green bell pepper(you'll only need about 1/2 of pepper and then chop that up)
sweet onion optional (adds a lot of flavor) I cut up only a 3rd of onion in big pieces
1 pkg of McCormick white chili seasoning
olive oil

Soak beans overnight...follow instructions on bag for soaking and cooking. Cut up chicken into small cubes. Get olive oil hot in skillet and cook chicken ( I used some garlic salt and cracked pepper on chicken while cooking). Once chicken is cooked pour one cup of hot water and pkg of seasoning and stir. Bring to a boil then simmer for about 30 min on low. Add half the pot of beans and all its juice....save other half of beans for another night/dish. Add one to two cups of water and cook on low/med for about 30 min depending on how soupy you want it ....I used only 1 cup because we wanted it thick. You can use shredded cheese and sour cream for toppers and cornbread or flour tortillas on the side.
