3 Big Baking Potatoes
16 oz Sour Cream
1 Can Cream of Chicken soup
3-4 cups Sharp Cheddar Cheese, Divided
4 Tablespoons Butter, Melted & Divided
1 Teaspoon Salt
1/2 Teaspoon Pepper
Bacon Bits
Chopped Green Onions
Preheat oven to 350, clean potatoes, bake about 75 min or until soft.
Pull off skin, and scrape out potatoes with a fork. Discard skins.
Combine potatoes, 3 T melted butter, sour cream, soup, salt, pepper and half of cheese.
Mix to desired consistency.
Increase oven temp to 400 and melt 1 T butter in large casserole dish.
Spread potato mixture in casserole dish, top with other half of cheese, bacon bits and green onions.
Cook 15-20 min. or until cheese bubbles around the edges.
Janet Dutro brought this to me when we got EMH and it was so good. I have made it a couple of times. It is a favorite of ours.
