Strawberry Pie

1 baked pie shell
1 cup sugar
1 cup water
3 Tbsp strawberry jello mix
1 pint fresh sliced strawberries
3 Tbsp cornstarch

Cook sugar, cornstarch, and water until thick. Stir in jello until dissolved. Cool. Slice and dry strawberries with paper towel then place sliced strawberries in pie shell. Pour cooled jello mixture over strawberries. Chill until set and then top with whipped cream.

***NOTE: Be sure that the jello mixture is cool before pouring over the strawberries. If too hot it will "cook" the strawberries.

This is one of my favorite summer desserts. It's great for a 4th of July Party or Summer Supper Club night.
