We had a great time at Harry the Potter on June 17th at our Chip N Dip party. They did a great job putting a fun night together for us. Many people wanted the recipe for the Mexican Casserole that was served. This is what was in it...though I don't know the quantities. I am guessing a can of each and 2 pounds of meat then onions and pepper to taste.
Mexican Casserole
Ground Chuck
Rotel (orginal)
Onions
Rotel (Hot)
Taco Seasoning
Bell pepper
Mexican Corn
Mushrooms
Black Olives
Shell Noodles
Stewed Tomatoes
Mexican Cheese
*Brown hamburger meat, onions and taco seasoning. Drain meat.
Add corn, black olives, mushrooms, stewed tomatoes, both rotels, and bell peppers.
Add cooked shell noodles and mix well.
Bake in oven on 350 for 1 hour. Then add cheese and bake for 10 minutes.
