Zesty Italian Shrimp

1 lb raw shrimp, peeled and de-veined
1/2 stick butter or margarine
1/2 to 1 lemon (depending on size)
1 packet of Italian dressing mix

 Preheat oven to 350. 

Melt butter in 8x8 baking dish. 

Thinly slice lemon and place in melted butter. 

Arrange shrimp on top of lemon. 

Sprinkle Italian mix over shrimp.

 

Cook at 350 for 15 minutes.  Be sure not to over cook as it will make shrimp ‘rubbery and chewy’.

 
***We really enjoyed this dish. Next time I may cook some angel hair pasta to serve with the shrimp.  This dish makes a thin gravy that I think would be good to mix with pasta.  I may also, sprinkle a little parmesan over the shrimp.
