No Roll Cookies

1 c. sugar
1 c. butter (2 sticks), softened
1 t. vanilla
1/2 t. almond extract
1 egg
2 1/3 cups all-purpose flour
1/2 t. baking soda
colored sugar or granulated sugar

In a large bowl, beat sugar and butter on low speed or with spoon until light and fluffy. Stir in vanilla, almond extract and egg. Stir in flour and baking soda. Shape dough into 1 in. balls. On ungreased cookie sheet, place 2 in. apart. Flatten with thumb all around. Sprinkle with colored sugar or granulated sugar. Bake at 375 for 8 - 10 minutes or until set. Remove from cookie sheet immediately to cooling rack. Makes about 4 dz.

( Watch because they brown quickly when baking.)

***This recipe if from a family friend C. Manning. She made these for me as a happy but she brought them to me when she fixed supper for my mom when she was sick. I LOVED these cookies. In fact, they may very well be my most favorite made-from-scratch cookie. She had on the note..."I hope you and boys enjoy the cookies". Well, I have to be honest...they boys didn't get very many. I had eaten most of them before I got them home. They are so light and crispy...you can't eat just 1 or 2 or 3.

I made these today to take on our vacation. I used Smart Balance 50/50 blend instead of real butter and they were just as good as hers.
