Corn Salad

1 can shoe peg corn, drained
1 bell pepper, chopped
1 cucumber, chopped
4 green onions, chopped
1 tomato, chopped
Salt to taste
Pepper to taste

Mix all ingredients with mayonnaise.

***This salad is great served at a 4th of July party, summer picnics, or other summer activities.

***I love this salad especially in the summer when you can get the fresh produce from the produce stand or Farmer's Market. I now have even more reason to love it because of the new, healthier mayonnaise. I like to make my version (without bell pepper and green onions) and eat it as an alternative to green salad. I sometimes eat imitation crab meat with it and let that be my lunch menu for the day...low fat, refreshing and healthy. It tastes just as good if not better the next day after all the "juices" have marinated.

***This recipe can be a bit time consuming (at least for me) due to chopping all the ingredients.

This recipe is one my mom has used for years. (not sure where it came from)
