Sweet & Sour Chicken

1 bottle Russian salad dressing
1 envelope dry onion soup mix
1 10oz jar apricot preserves
1 cut up chicken

Place chicken pieces in long, shallow pan. Mix other ingredients & pour over chicken. Bake 350 degrees for 1 hour.

Serve with rice - good sauce.

I tried this and my family liked it...the kids were hesitant of a new chicken dish, but liked the sauce. I cut up a package of chicken breast tenders and used sugar-free preserves. Also, it was easier to clean up my pyrex dish by spraying it with cooking spray.

  1. Tried it. Loved it! It even worked in the Crock Pot, but I definitely used your tip of spraying with PAM first!
