2 Eggs
1-1/2 c Wesson Oil
2-1/2 c flour
1 t salt
1 t baking soda
2 t baking powder
2 c sugar
3 c chopped apples
1 c chopped nuts
Beat eggs until creamy. Sift flour, salt, soda, baking powder, and sugar together. Add dry mixture to eggs. Stir in apples, oil and nuts. Pour into rectangle baking pan. Bake at 350 degrees for one hour. (in my oven its 40 minutes) Serve from cake pan. Great warm with vanilla ice cream!
My mother-in-law has been in heaven for a number of years. When we were first married my husband spoke of how he missed his mom's cake. Therefore, I got her recipe and I like to make it in the fall during the holiday season as a way to honor her and her impact on my husband.
